Homemade Air Fried Crunchy Onion Rings

INGREDIENTS
- 1 large onion
- 2 cups all-purpose flour
- 2 Tbsp. seasoning salt
- 1 Tbsp. cornstarch
- 1 cup buttermilk
- 2 eggs
- 1 Tbsp. thyme leaves (fresh if possible)
- 1 cup plain panko breadcrumbs
- 1 cup olive oil
- Non-stick cooking spray
EQUIPMENT
- Cutting board
- Chef's knife
- Dry measuring cups
- Wet measuring cups
- Measuring spoons
- Whisk
- 3 large bowls
- 3 half-sheet pans
- Tongs
- 4 cooling racks
- Parchment paper
INSTRUCTIONS

- Cut onion into 1/2" slices and divide slices into individual rings.
- Place a rack on a half sheet pan and place the onion slices on the rack. Evenly spray both sides of the onions with cooking spray.
- Prepare three bowls:
- Bowl One: Combine 1 cup of the flour, 1 Tbsp. of the seasoning salt, and the cornstarch. Mix well.
- Bowl Two: Whisk together the buttermilk and the eggs.
- Bowl Three: Combine the other cup of flour, the panko crumbs, the thyme leaves, and the other Tbsp. of seasoning salt. Mix well.
- Place the onion slices into Bowl One and toss well to coat all pieces.
- Remove rings and place into Bowl Two. Toss well to coat pieces.
- Shake off any excess coating and place rings into Bowl Three. If the mixture becomes clumpy, make a fresh batch for Bowl Three.
- Place rings into a single layer on a half sheet pan lined with parchment paper. Place the prepared rings in the freezer until firm, at least one hour.
- Once the rings are firm, preheat your oven to 350 °F using Air Fry mode.
- Pour the olive oil into a bowl. Place a rack on a half sheet pan.
- Remove rings from freezer and gently flip them in the oil until all breading has absorbed oil. Place the oiled rings on the rack and allow any excess oil to run off.
- Place the rack on a new baking sheet and put it on the center rack of your oven. Air fry for 20 minutes.
- Carefully remove pan of rings from oven and serve hot. Enjoy!
