Traeger Mixed Berry Pie

INGREDIENTS:
- 2-1/2 cups all-purpose flour
- 1 cup (2 sticks) butter, cold
- 1/4 cup cornstarch
- 1 tbsp sugar
- 6-7 tbsp ice water
- Juice of 1/2 lemon
- 1 tsp salt
- 3 lbs mixed berries, frozen or fresh
- 1/2 tsp ground cardamom
PREPARATION:
- In the bowl of a food processor combine flour, sugar and salt. Pulse to combine.
- With the machine running, drop in little pieces of cold butter until all butter is added and mixture resembles coarse cornmeal. Add cold water 1 Tbsp at a time until dough comes together. You may not need all the water.
- Turn dough out onto a floured surface and form into two discs. Roll into two big rounds large enough to cover the pie dish with an overhang of at least 1-inch. Place one into pie dish and prick the bottom with a fork.
- To make the filling combine berries, cornstarch, lemon juice, cardamom and a pinch of salt in a medium bowl.
- Pour berry mixture into the crust. Cut the second disc into strips for lattice or leave whole and cover the top of the berries. If leaving the top crust whole cut a vent or desired shape into the crust.
- When ready to cook, set the temperature to 350 degrees F and preheat, lid closed for 10-15 minutes.
- Place the pie directly on the grill grate and bake 45 minutes to 1 hour until the liquid has thickened and the crust is golden brown.
- Remove from grill and let cool at room temp to set up. Serve with whipped cream or ice cream if desired.
