Traeger Roasted Corn Succotash

INGREDIENTS:
- 4 EARS OF CORN
- 1 ZUCCHINI, THINLY SLICED
- 3 TBSP OLIVE OIL, DIVIDED
- 1 LB GREEN BEANS,
CLEANED AND TRIMMED - 1 ONION, THINLY SLICED
- 2 TBSP SHERRY VINEGAR
- 1 CUCUMBER, CUT INTO CUBES
- 1 PINT CHERRY TOMATOES, HALVED
- 1/4 CUP BASIL CHIFFONADE
- SALT AND PEPPER, TO TASTE
PREPARATION:
- When ready to cook, set the temperature to High and preheat, lid closed for 15 minutes.
- Place the ears of corn directly on the grill grate.
- Toss the green beans with 1 Tbsp olive oil and season with salt and pepper. Place on a sheet tray and place the sheet tray on the grill grate next to the corn.
- Cook the green beans for 8-10 minutes or until lightly browned and cooked through.
- Cook the corn until the exterior is lightly browned and kernels are tender, about 15-20 minutes. Remove from the grill and let cool at room temperature.
- When the corn is cool enough to handle, cut the kernels from the cob and place in a medium bowl.
- Cut the green beans into 1-inch sections and place in the bowl with the corn.
- Place the remainder of the ingredients into the bowl with the corn and toss to mix well.
- Check for seasoning with salt and vinegar. Enjoy!
