Weber Pig Shots
Posted on April 13, 2020 By Weber GrillsThese are a great appetizer. They typically have green chilies in the mix, but we left them out to reduce the spicy heat. The key to this recipe is the crispness of the bacon.
- YIELD : 35 - 40 each

- GRILLING TIME : 60 - 70 minutes
INGREDIENTS:
- 1 package Sausage, kielbasa
- 1 lb. Bacon of choice
- 8 oz. Cream Cheese
- 3/4 cup Mexican 4 Cheese, shredded
- 1/2 cup Brown Sugar
- as needed BBQ Spice of choice
GAS/CHARCOAL INSTRUCTIONS:
- On a cutting board using a sharp knife cut smoked sausage into 1/2" thick pieces. Cut bacon in half vertically. Wrap bacon around the smoked sausage to imitate a shot glass.
- Place each bacon wrapped sausage on a skewer.
- In a mixing bowl, combine cream cheese and shredded cheese.
- Pipe or spoon cream cheese mixture into each bacon wrapped sausage. If a pastry bag is not available, use a zip lock back and cut off the corner. be careful not to overfill with cream cheese.
- Sprinkle each pig shot with brown sugar and BBQ spice.
- Prepare the grill for indirect cooking over low heat (250øF - 350øF).
- Cook the pig shots on indirect low heat cooking until the bacon is crisp. Roughly 60 to 70 minutes.
- Remove from the grill and allow to cool for 10 minutes. Serve warm. It is very important to allow these to cool or the cream cheese is too hot and will burn peoples mouth.
