Weber's Kick'n Chicken Wings

INGREDIENTS:
- 5 lbs Chicken Wings
- 1/2 cup Canola Oil
- 4 bottles Weber Kick'n Chicken Seasoning
GAS/CHARCOAL INSTRUCTIONS:
- Using a sharp knife, remove the tips of the chicken wings.
- In a mixing bowl, toss wings with oil blend and season generously with the Weber Kick'n Chicken Seasoning. Allow to sit in marinade for at least 2 hours.
- Remove the wings from the bag and discard the marinade.
- Prepare the grill for indirect cooking over medium heat (350ø to 450øF).
- Grill the wings over indirect medium heat, with the lid closed, for approximately 15 minutes.
- Open the lid, turn the chicken wings over, close the lid and continue cooking for an additional 10-15 minutes, until the chicken is no longer pink at the bone and the skin is crispy (165øF in the thickest part of the wing).
- Remove from the grill and allow to rest for 5-10 minutes. Serve warm.
SMOKE FIRE INSTRUCTIONS:
- Set the Smoke Fire Temperature to 325øF.
- Preheat the grill for 15 minutes and then use a wire brush the clean the grill grates.
- Place the wings on the grill and cook them for 40 - 45 minutes to infuse that smoke flavor.
- Turn your Smoke Fire Temperature up to 400 degrees and finish the wings off with a little high heat at 5 minutes a side to crisp the wings up.
- Allow the wings to rest for 5 minutes and serve.
